Orange Almond Salad with Quinoa

Remember  The Magic Pan restaurant ? Such a fun date destination…and I worked there as a crepe cooker and waitress (you should see my crepes!) This salad is based on the most popular salad there-  made with this combination of flavors (sans Quinoa, of course)

For the dressing:

¼ cup Champagne or white wine vinegar

¼ cup juice from fresh oranges (see above)

1garlic clove peeled and minced

½ cup good quality olive oil

For the salad:

1 cup white quinoa- cooked as per directions on box

2 Cara Cara oranges –peeled and sliced

( you may substitute canned mandarin oranges)

¼ cup crumbled blue cheese

3 slices crumbled (real) bacon * optional

½ cup unsalted slivered almonds- toasted

1 bowl of arugula, mesclun, or Romaine lettuce

Directions:

  1. Cook Quinoa

2.toast almonds

3.cut oranges

Make dressing:

in small bowl of food processor or by hand whisk

Combine first 3 ingredients

Slowly add olive oil in single stream

Season with sea salt & fresh pepper

Add 1/2 dressing to salad bowl first. Add greens

Top with added ingredients and toss . add more dressing to taste
